Mrs. K.'s Pumpkin Pie Cake Recipe

 

Ingredients for Cake:

1 box of yellow cake mix

4 eggs

1 stick butter or margarine

1 large can pumpkin pie filling

1/2 cup brown sugar

1/4 cup granulated sugar

1 small can evaporated milk or 2/3 cup milk

1 1/2 tsp. cinnamon or pumpkin pie spice

Procedure:

Take 1 cup of the yellow cake mix from the package and set aside for crumb topping.

Mix remaining cake mix with 1 egg and 1 stick belted butter or margarine.  Pat into bottom of 9" x 13" pan.

Mix can of pumpkin pie filling, 3 eggs, 1/2 cup brown sugar, 1/4 cup granulated sugar and evaporated milk.  Stir in 1 1/2 tsp. cinnamon or pumpkin pie spice.  Pour on top of cake mix in pan. 

Ingredients for Crumb Topping:

1 cup yellow cake mix (set aside)

1/2 cup granulated sugar

1/2 stick cold butter

1 cup finely chopped walnuts

Procedure:

Mix 1 cup of cake mix with 1/2 cup sugar, 1/2 stick cold butter and chopped nuts.  A pastry blender will help to ensure a finer crumb product.  Sprinkle on top of pumpkin mixture.  Place baking pan on a cookie sheet to prevent to bottom of the cake from getting too brown.  Bake for 50 - 55 minutes at 350 degrees.
